I am creating a stylish recipe book that is compiled from the recipes of the greatest cafes and restaurants in Bali. And, while this is a commercial proposition with great market exposure in Indonesia and beyond, there is a very special reason that I am undertaking this project.
On one of my recent trips to papua I came to the hospital in Wamena. This is the only hospital available to the indigenous hill tribe people of Papua and the people who run it are amazing. Kim Dugger, with Paul and Jenny Faulkner, are working tirelessly in unbelievable conditions to bring basic health care to people who have no access to any other health services. These wonderful people are also working to help train locals to become village health workers and structure an outreach program. I will donate all the profits from the sale of the recipe book to the hospital in order to support their work.
Obviously I am also interested in creating a book that is fully representative of the talents of Bali's great chefs, the remarkable cuisine available and the real feeling for food appreciation that we have here on Bali. I want to make an appealing book that will stand out in the current market and be regarded as a book of interest as well as a good purchase for a good cause.
